{"id":6075,"date":"2010-12-20T21:20:04","date_gmt":"2010-12-21T04:20:04","guid":{"rendered":"http:\/\/www.kathrynpetroharper.com\/mindfullife\/?p=6075"},"modified":"2026-01-21T16:32:54","modified_gmt":"2026-01-22T00:32:54","slug":"shortbread-and-raspberry-heaven","status":"publish","type":"post","link":"https:\/\/www.kathrynpetroharper.com\/mindfullife\/2010\/12\/20\/shortbread-and-raspberry-heaven\/","title":{"rendered":"Shortbread and Raspberry Heaven"},"content":{"rendered":"<p><strong>Raspberry Almond Thumbprint Cookies<\/strong><\/p>\n<p>1 cup butter, softened<br \/>\n2\/3 cup white sugar<br \/>\n1\/2 teaspoon almond extract<br \/>\n2 cups all-purpose flour<br \/>\n1\/2 cup seedless raspberry jam<\/p>\n<p>3\/4 cup confectioners&#8217; sugar<br \/>\n3\/4 teaspoon almond extract<br \/>\n1 Tablespoon milk<\/p>\n<p>Preheat oven to 350 degrees F (175 degrees C).<\/p>\n<p>In a medium bowl, cream together butter and white sugar until smooth. Mix in 1\/2 teaspoon almond extract. Mix in flour until dough comes together. Roll dough into 1 1\/2 inch balls, and place on ungreased cookie sheets. Make a small hole in the center of each ball, using your thumb and finger (I used a 1\/2 teaspoon measure, round side down), and fill the hole with preserves (I used 1\/4 teaspoon to scoop).<\/p>\n<p>Bake for 14 to 18 minutes in preheated oven, or until lightly browned. Let cool 1 minute on the cookie sheet.<\/p>\n<p>In a small bowl, mix together the confectioners&#8217; sugar, 3\/4 teaspoon almond extract, and milk until smooth (adjust milk amount if needed to get proper consistency).
