So here&#8217;s one I hope you&#8217;ll like!<\/p>\n<p><strong>Braised Lettuce and Peas with Scallions<\/strong><br \/>\n1\/4 cup butter<br \/>\n4 Bibb (Little Gem) lettuces, halved lengthways<br \/>\n2 bunches scallions, trimmed<br \/>\n14 oz. shelled peas (about 2 1\/4 lb. in pods)<br \/>\n1\/2 cup water<br \/>\nSalt and ground black pepper to taste<\/p>\n<p>Melt half the butter in a wide, heavy pan over low heat. Add the lettuces and spring onions. Turn the vegetables in the butter,then sprinkle in salt and plenty of freshly ground black pepper. Cover and cook gently for 5 minutes, stirring once. Add the peas and turn them in the buttery juices. Pour in the water, then cover and cook over a gentle heat for 5 more minutes. Uncover and increase the heat to reduce the liquid to a few tablespoons. Stir in remaining butter and adjust the seasoning. Serve immediately.
