{"id":2439,"date":"2006-12-06T15:56:22","date_gmt":"2006-12-06T22:56:22","guid":{"rendered":"http:\/\/www.kathrynpetroharper.com\/mindfullife\/?p=2439"},"modified":"2026-01-21T16:41:56","modified_gmt":"2026-01-22T00:41:56","slug":"sweet-potato-casserole","status":"publish","type":"post","link":"https:\/\/www.kathrynpetroharper.com\/mindfullife\/2006\/12\/06\/sweet-potato-casserole\/","title":{"rendered":"Sweet Potato Casserole"},"content":{"rendered":"<p>This is almost a dessert, but I first encountered it as part of Thanksgiving dinner.<\/p>\n<p>Ingredients:<\/p>\n<p>1 cup sugar<br \/>\n1 can Eagle brand sweetened condensed milk (fat free)<br \/>\n1 stick margarine or butter<br \/>\n1 large (29 oz.) can sweet potatoes<br \/>\n1\/2 tsp cinnamon<br \/>\n1\/4 tsp nutmeg<br \/>\n1\/8 tsp cloves<br \/>\n2 eggs<br \/>\n1\/2 cup chopped pecans<\/p>\n<p>Pre-heat oven to 350F. Mash potatoes. Add the rest of the ingredients except for the pecans and stir together well. Pour in to a large, oven-safe dish and sprinkle the  top with pecans.
