{"id":2437,"date":"2006-12-04T14:12:24","date_gmt":"2006-12-04T21:12:24","guid":{"rendered":"http:\/\/www.kathrynpetroharper.com\/mindfullife\/?p=2437"},"modified":"2026-01-21T16:42:03","modified_gmt":"2026-01-22T00:42:03","slug":"fast-and-tasty","status":"publish","type":"post","link":"https:\/\/www.kathrynpetroharper.com\/mindfullife\/2006\/12\/04\/fast-and-tasty\/","title":{"rendered":"Fast and Tasty"},"content":{"rendered":"<p>I made a tasty shrimp dish from <span style=\"font-style:italic;\">Fish: the Complete Guide to Buying and Cooking<\/span> by Mark Bittman.<\/p>\n<p><u>Roast Shrimp with Orange and Tarragon<\/u><br \/>\nMakes 4 servings<br \/>\nTime: 20 minutes<\/p>\n<p>3 Tbsp. flavorful olive oil<br \/>\n4 sprigs of fresh tarragon or 1\/2 tsp. dried<br \/>\n1 to 1.5 pounds large shrimp, peeled (I used Trader Joe&#8217;s frozen)<br \/>\n1\/2 cup fresh orange juice<br \/>\nZest of 1 orange, finely minced<br \/>\nSalt and freshly ground pepper to taste<\/p>\n<p>Preheat the oven to 450F. When it is hot, warm 2 Tbsp. of the olive oil in a baking pan on top of the stove, then add the tarragon; put into the oven until the tarragon begins to sizzle. Add the shrimp, then sprinkle with the orange juice and zest, salt, pepper, and the remaining olive oil.
